Recreating pink defect in cheese with different strains of Thermus bacteria
نویسندگان
چکیده
Pink discoloration defects in cheese manifests as the appearance of pink patches within blocks and has recently been associated with Thermus thermophilus. Swiss-type cheeses were prepared at pilot scale using thermophilic starter cultures, Propionibacterium freudenreichii, one thermophilus HB27, scotoductus SE1 or DPC6866 a control without Thermus. Significantly, higher level redness was observed HB27 relative to other suggests that development defect is dependent on strain present other, yet unknown, factors require further study.

Thermus and the Pink Discoloration Defect in Cheese
A DNA sequencing-based strategy was applied to study the microbiology of Continental-type cheeses with a pink discoloration defect. The basis for this phenomenon has remained elusive, despite decades of research. The bacterial composition of cheese containing the defect was compared to that of control cheese using 16S rRNA gene and shotgun metagenomic sequencing as well as quantitative PCR (qPC...
متن کاملPink discolouration defect in commercial cheese: a review
Development of a pink color defect is an intermittent but persistent defect in a wide range of ripened cheese varieties (Swiss, Cheddar, Grana, and Italian types) which may or may not contain an added colorant, e.g., annatto. Pink discoloration results in downgrading or rejection of a product with consequential economic loss to producers. Pink discolorations can manifest in a number of ways, e....

Electroporation conditions were determined for electroporating the broad-host-range plasmid pHX200V-47-ml (22.4 kb) into four pink-pigmented methylotrophic strains (Methylophilus methylotrophus AS1, Methylobacterium extorquens AM1, Methylobacterium organophilum XX, and Pseudomonas sp. M27). For these methylotrophs, a high electric-field strength (15 kV/cm) and high DNA concentration (18.75 ng/~...
متن کاملCharacterization of bacteriocinogenic strains of lactic acid bacteria from traditional Slovenian cheese ‘Tolminc’
Artisanal cheese and other dairy products are traditionally produced from raw milk. The chemical and microbiological properties of milk are besides technological procedure among the most important parameters that determine the final characteristics of a product. Majority of microbes present in the rich microbiota of raw milk are considered beneficial but we should also be aware of a possibility...
